Ingredients

  • 4 lbs beef ribs
  • 1 tbsp salt
  • 1 tbsp pepper

When you want it like it's done in Texas. This comes out amazing every time, lots of smoke, lots of beef flavor. Don't mess with the simplicity here as it really adds to the unique simple nature of the dish.

    Heat your smoker to 225 F (107 C)

    Step 2

    Put the (1 tbsp) salt and (1 tbsp) pepper on the front and back. Let sit for 15 min while your smoker heats up.

    Step 3

    Cook to 203 F (95 C). Typically for 1-inch ribs it will take 5 hours. for 1.5 inches 6 hours and for 2 inches 7 hours. For proper Texas, ribs don't wrap them. You want that nice thick bark and a soft tender center.
