Spicy Fish Soup
Spicy, delicious, and filling fish soup. Some ingredients come from more of a Thai based fish soup (clam juice, coconut milk) but have other more traditional northeastern American ingredients.

Ingredients
Serves 7
- 1 medium onion, chopped
- 3 large garlic cloves, minced
- 2/3 cup fresh cilantro, chopped
- 1 1/2 cups of fresh chopped tomato (you can use canned)
- 1 lb fish, cod (you can sub for halibut or snapper) cubed
- 1/2 lb scallops (can be substituted for shrimp (make sure they don' t have there tails))
- 2 medium carrots
- 1 tbs salt
- 1 tsp Freshly ground black pepper
- 2 bay leaves
- 1 tsp cayenne pepper
- 1 tbs olive oil
- 1 12 oz can coconut milk
- 1 12 oz can tomato sauce
- 1 cups water
- 2 cups chicken bone broth
Method

Put 1 tbs of olive oil into a big soup pot (prefer dutch oven). Take your onion, garlic, and cilantro together into a pot. Cook for 1-3 min or until the onion starts to go translucent. Add (2 chopped ) carrots cook for 3-5 min until the carrots start to soften.

Add (1 1/2 cups ) tomatoes, (1 can) coconut milk, and (2 cup) chicken bone broth. Cook for another 3-5 minutes or until the paste is integrated (stir often).

Toss in all the ( 1 lb cubed ) fish, (1/2 lb) scallops, (1 tbs) salt, (1 tsp) pepper, (2) bay leaves, and (1 tsp) cayenne pepper, (1 can) tomato sauce, (2 cup) bone broth, (1 cups) water, Cook on low to medium heat for 1.5 hours (covered).
