Ingredients

Serves 5

  • 2 pounds skinless tilapia filets
  • 4 tablespoons tomato sauce
  • Juice of 1 lemon
  • 2 clove garlic, minced
  • 2 tsp dried oregano
  • 4 tablespoons dried bread crumbs
  • 8 black olives, pitted and roughly chopped, for serving
  • 1 tbsp fresh parsley
  • 2 tbsp olive oil

I have spent a decent amount of time cooking fish in the Sous Vide. I think this is a unique and flavorful dish that is something different to do with Tilapia. Hope you enjoy!

Method

  1. 0h
    Step 1

    Heat Sous Vide to 134 F (57 C).

  2. 0.25h
    Step 2

Mix lemon juice, (4 tbsp) tomato sauce, 1 tablespoon olive oil, garlic, oregano, (1/2 tsp) salt, and (1/4 tsp) pepper in a small bowl.

  3. 0.5h
    Step 3

Put the fish into a large Sous Vide bag. Pour the mixture into the bag. Mix well so the fish is fully coated.

  4. 0.75h
    Step 4

Cook for 30 minutes in the Sous Vide bath.

  5. 1h
    Step 5

Mix bread crumbs with freshly chopped parsley. Put the fish on a broiler-safe pan. Coat the top of the fish with the bread crumbs.

  6. 1.25h
    Step 6

Place in the broiler (over with broiler is fine) on low for 5 min or until golden brown. Place the black olives on top the breading, serve.
